I have already trussed it with the floss, waxed nylon standard floss. The roast is resting, uncooked in the refrigerator until I want to cook it tonight. My concern is will the floss catch fire or melt into my roast? I don't care if it burns off, I just don't want anything to happen to the food! It's gotta hold up to roasting at 250* for a few hours then some broiling....
